Tuesday Night Check In

It’s been a while since I’ve actually posted from Tumblr. As a matter of fact, it’s been a while since I checked Tumblr. And I have to apologize to those of you who left questions or comments on my recipes and photos!

cjmindc - The Southwestern Beef & Sweet PotatoShepherds Pie from the WW I Love Leftovers cookbook was delicious! I am totally in love with that book, I haven’t made anything the family didn’t like yet! …and the Shrimp Scampi was delicious as well and super quick and easy.

nourritureetfleurs - the Philly Cheesesteak recipe came from a Weight Watchers cookbook called Best Darn Food Ever! It’s a great cookbook - haven’t made anything from it I didn’t like. Lots of comfort food recipes!

So for anyone going to Weight Watchers, you know this weeks topic was taking 10 minutes out of your day to exercise. While I get in a regular workout 3-4 times a week, the thought occurred to me how many more calories I would burn if while watching TV I did some small exercises! So I’ve been using 3lb weights while I sit and watch my favorite tv shows. After two nights my arms were killing me. That’s how I know it’s working. Plus it’s nice to fit in the 10 minutes on the busy nights because I don’t go to bed feeling like I didn’t do anything. So if you haven’t tried it, I really suggest being active for 10 minutes a night while you watch New Girl (because everyone is watching New Girl right?). It’s an easy way to earn an activity point or two!

Crossfit

I’ve been wanting to join Crossfit for a while now, but because of the damage and surgery to my ACL I’ve been a little scared. Well my knee is much stronger now, and I aint skeerd no more..

So I’m going to a free WOD on Tuesday to decide if I want to join. I’m excited at the prospect of a new challenge. Cause you know, full time work, and school just isn’t enough.

My Love Affair with Snapple

I love Snapple. And now they went and did this for me! White Peach Passionfruit! The whole bottle is only 2 WW PP+!

Wine Glazed Mahi Mahi

Tonight’s dinner, Wine Glazed Mahi Mahi, comes from Everyday With Rachael Ray. The original recipe calls for Halibut, but you can use any white fish (just be sure to adjust for correct nutritional info)

  • cup sweet white wine, such as moscato
  • clove garlic, crushed
  • tablespoons butter
  • halibut fillets (about 6 oz. each)
  • lemon wedges, for serving

Preheat grill over medium-high. In small saucepan, boil wine, garlic and butter until reduced by half, about 5 minutes. Season fish; grill, basting often with wine mixture, until cooked through, about 6 minutes. Serve with lemon wedges.

TIP: So you don’t lose your fish to the grill gods, before putting the fish on the grill, brush them with a little oil. Also, after the grill has heated up, pour a little oil on a wet paper towel and rub it across the grates. Doing these things will help your fillets from sticking to the hot grill and ruining an otherwise delicious dinner.

Servings: 6

Sweet Potato Salad

Tonight, dinner’s side dish, Sweet Potato Salad, is from Rachael Ray.

  • pounds sweet potatoes, cut lengthwise into planks
  • 1/4 cup EVOO
  • tablespoons minced shallot
  • 1 1/2 tablespoons lime juice
  • 1/4 teaspoon chili powder
  • 1/2 cup cilantro

Brush sweet potatoes with EVOO; season. Grill, covered, until tender. Cool and cube. Dress with remaining ingredients.

Serves 4.

Calories per serving:348, Fat:15g, Protein:5g, Fiber:4g

Vegetable Rolls

This is lunch today.The original recipe is from Pioneer Woman. But I modified it slightly

  • 8 ounces, weight 1/3 Less Fat Cream Cheese, Softened
  • 1 Tablespoon Chopped Green Onions
  • 1 teaspoon Fresh Lemon Juice
  • 6 whole Taco Sized Flour Tortillas
  • 3 whole Carrots, Peeled And Jullienned
  • 1 whole Cucumber, Seeds Scraped Out And Julienned
  • 3 leaves Green Leaf Lettuce, Spine Removed
  • 2 whole Avocados, Sliced

Combining the softened cream cheese with green onions & lemon juice. Stir to combine.

Spread cream cheese in a thin layer over the tortillas. Lay ingredients down the middle of the tortilla.

Roll up the tortillas as tightly as they’ll go, then wrap each rollup in plastic wrap and refrigerate for one hour.

To slice, cut each rollup exactly in half, then line up the two halves and cut them in half again. Stand the end pieces up so that the veggies stick out the top.

6 Servings, about 175 calories per one whole roll.

Egg & Avocado Toast

This morning’s Breakfast. I found the idea in this months Everyday with Rachael Ray magazine. I modified it a slightly using egg whites instead of a whole egg.

  • teaspoon butter
  • egg, beaten
  • 1/4 avocado
  • slice wheat bread, toasted
  • jalapeno hot sauce, such as Tabasco

In a small nonstick skillet, melt butter over medium heat. Add egg; season and scramble. In small bowl, mash avocado; season and spread on toast. Top with egg; sprinkle with pepper and hot sauce. Makes 1.

Recipe Renovating: Dunkin’ Donuts Smokehouse Sausage Breakfast Sandwich

I don’t care what kind of diet you are on. Who doesn’t love Dunkin’ Donuts once in a while? When they started advertising the new Smokehouse Sausage Breakfast Sandwich, I couldn’t wait to try it. And I did, and it was delicious. Then I looked up the nutrition info and I wanted to puke it all back up.

Calories - 550 (from Fat - 320)
Fat - 36g (Saturated Fat - 13g)
Sodium - 1510mg
Carbs - 36g (Sugar - 4g)
Protein - 21g

Plug that into your points calculator and Holy Shit. A whopping 15 points. I might as well have eaten a Whopper for breakfast!!

So I decided to try and make over this sandwich into a more Weight Watcher friendly option. And I did. I cut the calories nearly in half, and the fat, well, it’s 1/6th of what the Dunkin’ Donut’s version is. I got the sandwich down to a doable 7 points.

So here, meet your new breakfast bff.

Instructions:

Toast the english muffin, and spray each side with one spray of butter.

Cook the egg beaters, seasoning them with salt and pepper. Once cooked, lay the egg beaters on top of the bottom half of the english muffin. Layer cheese over egg beaters.

Slice 1 turkey kielbasa link lengthwise, then in half. Spray 2 pieces with spray butter and cook on bothsides until you get each side a little charred. Layer the sausage onto the cheese, and place the top of the muffin over all.

Dig in, die in breakfast heaven.

Servings: 1

WW Points+: 7

Note: I take my breakfast to work. So I wrapped my sandwich in parchment paper and then in aluminum foil and just nuked it for 20 seconds when I got to work.

Project 34: Mid Week Weight Check

Well, I can’t say I’m surprised at this mornings check in.

My weekend was full of fun and friends, and I let myself indulge more than normal. Then this week, I haven’t cooked dinner at home because we’ve had something to do every night, which also meant I havent’ made time to workout. So I am not surprised that the scale shows I am up 2 pounds from weigh in on Friday.

Looks like I have a night of Zumba and Biggest Loser workouts awaiting me!
